
A sweet, thick, fruity dessert with no added sugar makes this a perfect treat for kids and adults.
Very easy to make with only three ingredients, and then you can store in the freezer to be taken out when needed.
The Banana and Strawberry Compote Recipe
Ingredients - amounts depend on size of bananas
2 very ripe bananas
strawberries (about half the volume of bananas)
water
You will need a hand blender (you can use a full blender if not)
Method
Peel and chop the ripe bananas and put into a saucepan. You'll need to add enough water to come to half the level of bananas. Top and chop the strawberries and put into the saucepan. Put over a medium heat to bring to a simmer. Stir occasionally and simmer for about 10-15 minutes. The water should take on the colour of the strawberries and the bananas will become mushy.
You need to then blend the mixture making sure that there are no lumps left at all. Check the consistency of the mixture, it should be fairly thick (but still runs). If not simmer for a little longer. Remember to have a taste and make sure it's nice! Once you're happy with the thickness separate into individual portions. I use the same baby food freezer packs that I used in the chicken stock recipe so that each cube is 50 ml.
