Today is Shrove Tuesday, or Pancake Day, or in France Mardi Gras. I thought I'd put a simple pancake recipe online just in case you're stuck for one to use. This makes perfect thin French style pancakes.

Ingredients needed to make the pancake batter:

  • 250 grams of flour
  • 4 eggs
  • 500 ml semi-skimmed milk
  • 1 tablespoon of oil
  • 20 grams of butter
  • salt

How to make the pancake batter

Put the flour into a mixing bowl, make a hole in the centre and add a pinch of salt and the eggs. Mix with a wooden spoon until it comes together. Whilst continuously mixing add the milk bit by bit, then add the oil and mix well. Cover the bowl and leave for 2 hours for the flavour to develop (if you're in a rush don't worry too much about this part).

If you're making a batch to share at the dinner table put a plate to warm in a low oven.

You are now ready to fry the pancakes. A pancake frying pan is preferable, however any flat bottomed frying pan will do it will just be harder to flip the pancake. Melt some of the butter in the pan first then one to two minutes on the first side of the pancake, flip and fry for another minute or two until cooked. Serve the pancake immediately or collect them all up on the warm serving plate.

You can serve the pancakes with anything you want. Some of the toppings we use are: jam; Nutella; honey; lemon; sugar; fruit. It's up to you :)
